Salsa only meant a Cuban dance to me till I knew it as a name for Spanish sauce. I noticed a lot of sauces that the Spanish people eat till I thought to create my own veggie sauce; hence I called it Veggie salsa. It is really easy to make, very quick steps and you’ll be eating and dancing… lalala
Ingredients 4 Servings
- Carrots chopped 8 large
- Ball peppers chopped 4 large
- Spring onions chopped 2 large
- Broth chicken, fish or beef; as desired 3 cups
- Corn decobbed; soft-cooked 2 cups
Combine all chopped vegetables them in melting butter in a saucepan; add 1 cup broth after sauteing the veggies for 5 minutes(or in 3 cups simmering broth directly if you are avoiding oil). Make sure to stir intermittently.
Then add salt and mixed spices to taste. Garlic, ginger, curry and thyme are great for this! Leave to cook for another 5 minutes.
Put off cooker; you don’t want overcooked vegetables- for taste and nutrients.
Serve as desired; with pasta, bread, rice, or tubers.#fitfam, salsa, sauce, sauce dance, vegetable salsa, veggie salsa, veggie sauce, Veggies
