Ingredients 2 Servings
- Sliced bread 4 slices
- Eggs 3
- Avocado sliced 2
- Spices ginger and garlic
- Scotch bonnet pepper (aka ata rodo) 4
- Onions sliced 1/2 bulb
- Tomato sauce Heinz ketchup works perfectly 2 tbsps
- Seasoning salt
- Fluted pumpkin leaves (ugu) diced as desired
Heat up 1 tsp of olive oil in a frying pan on medium heat. Whisk the eggs, spices, seasoning, pepper, sliced fluted pumpkin leaves, onion and tomatoes together in a bowl. Pour the egg mixture in the oil to fry; flip over for both sides to get fried. Place the fried egg omelette in a flat plate; leave the pan on the fire.
Spread tomato sauce on the bread slices and place on the oiled pan (no added oil; just the residue from the fried eggs). Toast the bread on medium heat and flip to toast both sides. Remove the toast bread; layer with egg omelette, top with avocado.
