Hi Hi…

It’s been a whiiiiile…  I sincerely apologize and agree that I owe You an explanation… that aside, I totally can’t wait for You to try this sandwich recipe as your next family breakfast. This sandwich will blow your mind, taste-bud ...   I’m certainly eating this on a repeat! Cheers!!!

 

Ingredients 2 Servings

  • Sliced bread 4 slices
  • Eggs 3
  • Avocado sliced 2
  • Spices ginger and garlic
  • Scotch bonnet pepper (aka ata rodo) 4
  • Onions sliced 1/2 bulb
  • Tomato sauce Heinz ketchup works perfectly 2 tbsps
  • Seasoning salt
  • Fluted pumpkin leaves (ugu) diced as desired

Step 1

Heat up 1 tsp of olive oil in a frying pan on medium heat. Whisk the eggs, spices, seasoning, pepper, sliced fluted pumpkin leaves, onion and tomatoes together in a bowl. Pour the egg mixture in the oil to fry; flip over for both sides to get fried. Place the fried egg omelette in a flat plate; leave the pan on the fire.

Step 2

Spread tomato sauce on the bread slices and place on the oiled pan (no added oil; just the residue from the fried eggs). Toast the bread on medium heat and flip to toast both sides. Remove the toast bread; layer with egg omelette, top with avocado.
