Whatever you eat, just add this plantain stir-fry; I mean it, I have eaten this with everything possible- literally! Credit it to my love for plantain; credit it to my love for veggies, credit it to my love for stir-fry… Just come along.
Ingredients 4 Servings
- Plantain diced 2 large
- Green bell pepper diced 2 large
- Carrots diced 4 large
- Onions diced 1 bulb
- Scotch bonnet pepper if you love spicy food as desired
- Spices turmeric, ginger, garlic, curry, thyme 1/2 teaspoon each
Fry/grill/roast plantain in cubes.
Heat 2 tablespoons of olive oil in a wok/frying pan. Add onions , grated turmeric, ginger and garlic. Stir to prevent burning.
Add all the chopped veggies, stir-fry for 3 minutes. Add the prepared plantain cubes. Stir in with salt, curry, thyme and seasoning for 3 minutes.
Serve with rice, beans, yam, potatoes, bread… limitless choices; or roll it in beans pancake like me.
