Spice is back fam 😉 ! Heads up because you are about to be flooded with some new spicy recipes, starting with this suya egg muffins that combines spicy nutty yaji with the flavour of grilled meats. This recipe is a very easy and quick egg meal you can whip up in 20 minutes to accompany breakfast, lunch, dinner or as a snack.

This recipe makes 4 suya egg muffins, you can sure double the recipe to make 8 instead or triple for 12 muffins… Cheers!
Ingredients 4 Servings
- Eggs 2 large eggs
- Mixed vegetables based on your preference 1 cup
- Mixed suya grill sausages, beef, shrimps 1 cup
- Sea salt a pinch
- Yaji 1 tsp
Preheat your oven to 180C. Whisk 2 eggs with a pinch of salt. Add vegetables, yaji and minced suya. (Feel free to add more yaji if you can handle the spice- I’m so with you in this!)
Pour the mixture into four silicon muffin cases ( if you do not have silicon muffin cases, simply lightly oil your regular muffin pan instead). Cook them in the oven for 15- 20 minutes ( check for firmness at 15minutes by inserting a toothpick in the centre- it shoulcmome out clean).
Serve warm or cold ( just the way you love it)
Ready to eat!
You can top with cheese to melt 2minutes to doneness.
You can make it in bulk and refrigerate for later.
