Macaroni and Veggie Stirfry

So I realized I was tired of eating spaghetti, then I thought to explore other pasta. Macaroni! This came with mixed feelings because my siblings have never liked it; though I’ve always been indifferent too. I wanted this to be different; so I thought if I made a nice sauce with it, I would totally enjoy it. Guess what? I really did!

INGREDIENTS      6 Servings

  • Macaroni           500g
  • Bell peppers            3
  • Tomatoes                3
  • Garlic            1 clove
  • Ginger         a thumb
  • Onions           1 bulb
  • Carrots sliced       2
  • Oil                 2 tbsps
  • Peas                  50g
  • Sweetcorn         50g

 

Get cooking

Step 1

Pour the macaroni into a pot of boiling water and leave to boil for 15 minutes, while you slice and dice other ingredients. Strain cooked macaroni; proceed to make the sauce.

Step 2

Using a frying pan/wok, heat up the vegetable oil. Add in the minced ginger, garlic and diced onions; stir fry for 3 mins. Stir in sliced bell peppers to cook for 2 mins. Then pour in all the remaining vegetables; season to taste. Add 1/4 cup of water and let simmer for 2 mins.

Step 3

Serve as desired. I made different servings.
