Here’s another recipe from my yam eureka moment as I worked on my project.
What I fancy about this particular recipe is that it got me thinking about my unborn children- I like to call them jewels; I imagined them loving up on this breakfast idea.

INGREDIENTS 4 Servings
- Yam 250g
- Floursieved/sifted 1/2 cup
- Eggs 2
- Water 1/2 cup
- Sugar 2 tbsps
- Milk 2 tbsps
Blend yam with 1/2 cup water. 1 tsp salt and 2 tbsps sugar (or sweetener).
Combine yam puree with eggs. Mix in flour; alternating milk.
Pancake mix is ready.
Heat a greased non-sticky pan, pour in 1/3 cup pancake mix into pan at a time. Allow one side to cook, then turn with a spatula for the other side to cook.
Serve as desired.
